So it's back to eggs. An omelet is a bit more challenging than boiling eggs, but most say the end result is much tastier altogether, so I'd say it's energy well spent.

Choose your eggs. It's pretty uncommon to make an omelet with just one egg, although you can attempt that too It's just that you will need a really small pan to make it work properly, otherwise you'll end up with an irregular thingie that is too thinly spread. Try it with at least three eggs. Depending on the number of people you're feeding you can add up to how many eggs you want.
Break the eggs in a bowl and start blending them gently with a fork. Do not beat, but make sure they are evenly and thoroughly blended. Add salt, pepper, chili and whatever strikes your fancy. If there's a particular dressing you would like to add, go ahead. There's no fixed rule on what you can put in an omelet. You can add grated cheese, bacon, mushrooms, onions, whatever. Just make sure they're finely chopped, the omelet doesn't stay on the stove long enough for thick slices to get cooked through.

There are two ways to go ahead. First: if you turn the heat to its maximum and draw the edges of the omelet towards the centre with a tablespoon and repeat until everything takes a golden shine you will have a very tasty omelet that's pretty nasty looking because of all the draw to and fro. Second: turn the heat somewhere low to medium and wait a couple of minutes. The bottom of the omelet will cook while the top will be nearly raw. Flip the omelet face down when you notice the sides detting cooked and wait another couple of minutes. Ready to serve.
